Our eleventh and final set of clay, water, and wood ash samples come from the town of Ypres in the province of West Flanders. A huge thanks to Dries for the amazing tour of ‘Le Monde des Mille Couleurs’ - a wild farming terroir that consciously cultivates historical herbs, botanical greens, edible flowers, and forgotten vegetables.
